Furring out walls before setting a shower pan is often necessary when the shower pan or liner has a flange that would otherwise push the wall board out of plane. The goal is to keep the finished wall straight, protect the waterproof layer, and prevent the backer board from bending over the pan edge. Several installation references show this clearly.
